
On mornings when I'm craving a more heart breakfast, breakfast quesadillas are my go to. They are easy to cook and often include ingredients you may already have in your pantry.
Ingredients:
1 large tortilla (burrito size)
1 cup divided shredded cheddar (or any cheese of your choice)
1/2 cup turkey sausage crumbles or 2 chopped turkey sausage links
2 eggs
salt and pepper to taste
1 tsp coconut oil
Recipe:
Heat coconut oil in a large skillet on medium heat. In a separate bowl scramble 2 eggs and season with salt and pepper.
Add the eggs to your heated pan. Once cooked through, remove eggs and set aside on a plate.
In the original skillet, add a tortilla flat in the pan. On one half of the tortilla add half of the cheese and top with the cooked eggs, breakfast sausage, and the other half of your cheese.
Once ingredients are heated and cheese is starting to melt, fold the empty half of the quesadilla over to blanket the ingredients and form a quesadilla.
When the bottom is lightly browned and cheese has melted, use tongs to flip your quesadilla over and lightly brown the other side.
Serve with salsa, sour cream, and guacamole if desired
