Instant Pot Picadillo

Picadillo is a dish originating from Latin America. It is primarily made from ground beef, tomatoes, olives, and seasoning. There are many variations of this dish however I keep my very simple and straight forward and it is still packed with flavor. Plus the aroma this dish produces is just *heavenly*. This recipe was taken from one of my favorite go-to recipe sites: skinnytaste.com. My version posted with adaptations below.



Course: lunch, dinner

Yields: 4 generous servings


Ingredients

  • 1 lb ground beef (or ground turkey for lower fat version)

    • 1/2 large chopped onion

    • 2 cloves garlic, minced

    • 1 tomato chopped

    • 1 tsp salt

    • Garlic powder (to taste)

    • 1/2 red bell pepper chopped

    • 4 oz tomato sauce (low sodium option)

    • 1 tsp cumin

    • 1 - 2 bay leaves

    • 2 tbsp green olives halved + 2 tbsp olive brine

Gadgets: Instant Pot, Food Processor (recommended for easy chopping/mincing)


Instant Pot Picadillo Recipe

  1. Press sautè button on instant pot, when hot brown your meat and season with salt, pepper, and garlic powder. Use a wooden spoon to break up the meat into small chunks until no longer pink.

  2. Add onion, garlic, tomato, pepper and stir for 1 minute. Add olives + olive brine, cumin, and bay leaf. Add in tomato sauce, 3 tbsp of water and mix thoroughly. Cover and cook at high pressure for 15 minutes. Use natural or quick release.

  3. Enjoy your picadillo over rice or cauliflower rice (for a low carb option)!
